An expert on nutrition, family development and raising healthy raw children, Karen Ranzi shares her recipe for Cucumber “Dogs.” Karen Ranzi has led a low-fat raw vegan diet since the mid-1990s. She is the author of Creating Healthy Children: Through Attachment Parenting and Raw Foods and the forthcoming Raw Vegan Recipe Fun for Families.

“These are especially nice during the warmer weather, when you can get local cucumbers and heirloom tomatoes,” Karen Ranzi says.
- Slice the cucumber in half lengthwise and scoop out the seeds to make a hollow area in each half of the cucumber.
- Fill the indentation with the mango and tomato mixture.
