Gazpacho Joy has been my favorite dinner recipe of spring and summer 2014. I crave this tomato-rich blend of nonsweet fruits, oh-so-flavorful herbs and direct lemon hit. Make yourself a batch one evening and you might find yourself daydreaming of slowly enjoying gazpacho!
My recipe has continued to evolve since I began making this winner in May as a late addition to Appetizers, Snacks and Party Dishes: Recipes from Raw Food Trailblazers in my four-volume Mouthwatering Recipe Book Series. Enjoy this starter recipe and follow the tips to amplify your gazpacho and turn it into a hearty meal!
- Blend two-thirds of the tomatoes, bell pepper, cucumber and herbs with all the lemon juice and pour into a bowl.
- Dice the remaining ingredients, adding to the bowl, and enjoy!
- Add in freshly picked corn and half a cup of spinach!
- Make Gazpacho Joy a whole meal by doubling the ingredient amounts and adding an avocado or two!
